Sheng Puerh

Puerh is unique among all genres of tea because the importance of the raw material far outweighs the processing skill. Sheng (生) puerh, often called "raw", "uncooked", or "green" puerh, is produced without any fermentation during the production or compression of the cakes. Instead, the fermentation of this tea occurs slowly through an aging process that can take as much as seventy years to reach full maturity.
